11/28/24 O&A NYC HOLIDAY BRUNCH: Baked Pears with Blue Cheese and Honey -By Holly Rae Anable

Ingredients:
4 ripe but firm pears, halved and cored
1/2 cup blue cheese, crumbled
2 tablespoons honey
1 tablespoon olive oil
1 teaspoon fresh thyme leaves
Salt and pepper, to taste
Optional: Chopped walnuts for garnish

Instructions:
1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Pears:
Cut the pears in half and scoop out the core with a melon baller or spoon to create a small well in each pear half.
3. Assemble the Pears:
Place the pear halves in a baking dish, cut side up.
Drizzle each pear half with a little olive oil.
Sprinkle crumbled blue cheese into the hollow of each pear.
4. Bake the Pears:
Bake in the preheated oven for 15-20 minutes, or until the pears are tender but still hold their shape, and the blue cheese is slightly melted.
5. Finish with Honey and Thyme:
Remove the pears from the oven and drizzle with honey.
Sprinkle with fresh thyme leaves, and season with a pinch of salt and freshly ground black pepper to taste.
6. Optional Garnish:
If desired, sprinkle chopped walnuts on top for extra texture and flavor.
7. Serve:
Serve warm as a savory appetizer or light dessert.

With Thanksgiving just a few days away nothing says down home like Southern Style Cornbread Dressing. And our favorite grill master/chef from Smokin and Grilling with AB has an easy to follow video recipe  to make a Southern Style Cornbread that would make granny jealous.

Southern Style Cornbread Dressing

Ingredients:
3 Spicy Links (Andouille Sausage) cut in to quarters
1/4 cup Olive Oil
1 cup Green Bell Pepper, diced
1 cup Celery, diced
1 cup Yellow Onion, diced
1 cup Green Onion (optional)
3 tbsp Garlic, minced
7 cups Crumbled Cornbread
1 tbsp Creole Seasoning (Sweet Smokie Joe, Creole Kick)
1/2 tsp Salt
1/4 tsp Ground Pepper
4 – 5 cups Chicken Broth
2 tbsp Sage
1/2 cup melted Butter
1/4 tsp Cayenne

Pre-Heat oven to 425 degrees F Bake in the oven for 50 minutes stirring and scraping the bottom to distribute the browned pieces at the halfway point (25 mins.)
